Sue-Ellen often kicks off her family’s week by cooking a beloved Jamaican national dish, ackee and “saltfish” 🐟 , but with a vegetarian twist close to her heart. 💖 She replaces the saltfish with jackfruit, a satisfying substitute that even has a similar texture, offering a unique blend of tradition and creativity on a plate.

Ingredients
- Ackee (canned or fresh)
- Young green jackfruit (canned, rinsed, and broken up into pieces)
- Onion, tomato, garlic, thyme, scallion, and pepper (all chopped)
- Salt and cayenne pepper, to taste
Directions
- Sauté the onion, garlic, scallion, and tomato with thyme and pepper.
- Add the jackfruit pieces and cook for about 10-15 minutes.
- Add the ackee gently and stir without breaking it up too much.
- Cook for another 5 minutes.
- Season with salt and black pepper to taste, and serve with a side of dumplings, just the way her daughter loves it!
